Ingredients
- 1 package Yellow cake mix
- 3 package Instant vanilla pudding
- 4 cup Cold milk
- 1 1/2 tsp Coconut extract
- 8 oz Cream cheese (softened)
- 1 can Crushed pineapple, well drained
- 2 cup Heavy Cream, whipped and sweetened ( 3 Tbsp sugar)
- 2 cup Flaked coconut, Toasted

Instructions
- Mix cake & pour into 2 greased 13x9 pans, bake 350° 15 minutes or until done. cool completely.
- In LG bowl combine pudding, milk & coconut extract.
- Beat 2 minutes add cream cheese & beat well
- stir in pineapple
- spread over cake's
- top with whipped cream
- sprinkle with coconut
- chill at least 2 hours
- can be covered and frozen up to a month
