- Preheat the oven to 400°F and lightly grease a small rimmed baking sheet.
- Press the pizza dough into a thin rectangle, stretching it close to the edges of the pan. Flatten any thicker spots with your fingertips so it bakes evenly.
- Bake the plain crust for 4 minutes so it sets a little before adding the toppings.
- Spread the country gravy in a thin, even layer over the warm crust, leaving a small border around the edges.
- Sprinkle the mozzarella evenly over the gravy, then scatter the cooked breakfast sausage across the top in small to medium irregular crumbles.
- Bake for another 10 to 12 minutes, until the cheese is fully melted and the crust edges are lightly golden.
- Let the pizza rest for 3 minutes, then cut it into rectangular slices like classic school breakfast pizza.
