Ingredients
- 1 cup orzo pasta
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup diced tomatoes
- 1 cup fresh spinach
- 2 tablespoons grated parmesan cheese
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Optional Ingredients
- 1/2 teaspoon red pepper flakes
Instructions
- Heat olive oil in a pan over medium heat and add the orzo, stirring it lightly until it starts to toast.
- Pour in the chicken broth and let it simmer, stirring occasionally so it doesn’t stick.
- Add the diced tomatoes and continue cooking until the orzo is tender and most of the liquid is absorbed.
- Stir in the heavy cream and let it thicken slightly.
- Add the spinach and cook just until it wilts into the pasta.
- Mix in parmesan cheese, salt, and black pepper until everything is creamy and combined.
- Serve warm while the sauce is still smooth and rich.
