Ingredients

  • 1 cup orzo pasta
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup diced tomatoes
  • 1 cup fresh spinach
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat olive oil in a pan over medium heat and add the orzo, stirring it lightly until it starts to toast.
  2. Pour in the chicken broth and let it simmer, stirring occasionally so it doesn’t stick.
  3. Add the diced tomatoes and continue cooking until the orzo is tender and most of the liquid is absorbed.
