- 1/4 cup crumbled cotija cheese
Optional Ingredients
- 1 tablespoon chopped cilantro
- Extra chili powder for topping
Instructions
- Heat the corn in a small pot or microwave until hot.
- Transfer the corn to a bowl and mix with mayonnaise, lime juice, chili powder, and salt until evenly coated.
- Stir in the cotija cheese.
- Spoon the mixture into small cups or bowls.
- Top with chopped cilantro or extra chili powder if using.
