- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 cup milk
- 1/2 cup sugar
- 1/2 cup unsalted butter
- 2 tablespoons honey
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- Preheat oven to 375°F.
- Melt the butter in a small skillet over medium heat until it turns golden brown and smells nutty. Remove from heat and let cool slightly.
- In a bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk milk, eggs, honey, and the browned butter until smooth.
- Pour wet ingredients into dry ingredients and gently mix until just combined.
- Grease a cast iron skillet and pour in the batter. Bake until the top is golden and a toothpick comes out clean.
- Let cool slightly before serving. Best warm.
