Ingredients
- 2 large chicken breasts
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 tsp garlic powder
- 1/2 tsp cayenne pepper
- Oil for frying
- 4 brioche buns
- 1/2 cup mayonnaise
- 2 tbsp hot honey
Optional Ingredients
- 4 pickle slices
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
Instructions
- Slice chicken breasts in half to make 4 thin cutlets. Season with salt, pepper, and paprika.
- Soak chicken in buttermilk for at least 10 minutes while heating oil to 350°F.
- Mix flour, cornstarch, garlic powder, cayenne, and a pinch of salt. Dredge chicken in flour mixture, then fry 4–6 minutes until golden and cooked through.
- Mix mayo with optional lemon juice and Dijon. Toast buns lightly.
- Build sandwiches with sauce, crispy chicken, pickles if using, and drizzle hot honey over the top.
