Instructions

  1. Preheat oven to 400°F. Place the pie crust into a 9-inch pie dish and crimp the edges. Set aside.
  2. In a large bowl, toss sliced apples with brown sugar, granulated sugar, flour, cinnamon, nutmeg, lemon juice, vanilla, and salt until evenly coated.
  3. Pour the apple mixture into the pie crust and press down gently so it sits evenly.
  4. In a separate bowl, mix flour, oats, brown sugar, and cinnamon. Pour in melted butter and stir until clumpy and crumbly.
  5. Sprinkle the crumble topping evenly over the apples, covering most of the surface.
  6. Bake at 400°F for 20 minutes, then reduce oven temperature to 350°F and bake another 30–40 minutes until the topping is golden brown and the filling is bubbling.
  7. Let the pie cool at least 1 hour before slicing so the filling sets.
