Ingredients
- 4 boneless chicken breasts
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, sliced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan
- 1 tsp Italian seasoning
- 2 cups fresh spinach
Optional Ingredients
- pinch of chili flakes
Instructions
- Season chicken with salt, pepper, and paprika.
- Heat olive oil in skillet over medium-high. Sear chicken 5–6 minutes per side until golden and cooked through; remove and set aside.
- In the same pan, sauté garlic for 30 seconds.
- Add sun-dried tomatoes and cook 1 minute.
- Pour in cream and chicken broth. Stir in Parmesan and Italian seasoning.
- Simmer gently 3–4 minutes until slightly thickened.
- Add spinach; cook until wilted.
- Return chicken to pan and spoon sauce over it. Simmer 2 minutes more.
- Taste and adjust salt/pepper. Add chili flakes if you like heat.
