Ingredients
- 3 lb pork loin roast
- 2 tbsp olive oil
- 2 tsp kosher salt
- 11/2 tsp cracked black pepper
- 1 tsp garlic powder
- 1 tsp dried sage
- 1 tsp dried thyme
Instructions
- Heat oven to 400°F.
- Rub pork all over with olive oil, salt, pepper, garlic powder, sage, and thyme.
- Place on a rack or pan and roast uncovered for 60–70 minutes, until internal temp hits 145°F.
- Rest 10 minutes, then slice.
