- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 1 large egg
- 1 tsp peppermint extract
- 3/4 cup cocoa powder
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup powdered sugar (for rolling)
- Mix melted butter and sugar until glossy.
- Add egg and peppermint extract and mix well.
- In a separate bowl, whisk cocoa powder, flour, baking powder, and salt.
- Stir dry ingredients into wet mixture until thick.
- Chill dough for 30 minutes.
- Preheat oven to 350°F (175°C).
- Roll dough into balls, coat generously in powdered sugar.
- Bake 10–12 minutes until cracked on top.
- Cool on baking sheet for 5 minutes before transferring.
