Ingredients
- 4 cups corn kernels (fresh or frozen)
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup cotija cheese, crumbled
- 2 tbsp lime juice
- 1 tsp chili powder
- 1/4 cup cilantro, chopped
Optional Ingredients
- Extra lime wedges, more cotija
Instructions
- If using fresh corn, cut kernels off the cob. If using frozen, thaw and pat dry.
- Heat a large skillet over high heat. Add corn (no oil) and char for 5-7 minutes, stirring occasionally.
- In a large bowl, mix mayonnaise, sour cream, lime juice, and chili powder.
- Add the charred corn to the bowl and toss to coat.
- Fold in cotija cheese and cilantro.
- Serve warm or chilled with extra lime and cheese on top.
