Mexican Street Corn Salad (Esquites)

Ingredients

  • 4 cups corn kernels (fresh or frozen)
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup cotija cheese, crumbled
  • 2 tbsp lime juice
  • 1 tsp chili powder
  • 1/4 cup cilantro, chopped
Optional Ingredients
  • Extra lime wedges, more cotija

Instructions

  1. If using fresh corn, cut kernels off the cob. If using frozen, thaw and pat dry.
  2. Heat a large skillet over high heat. Add corn (no oil) and char for 5-7 minutes, stirring occasionally.
  3. In a large bowl, mix mayonnaise, sour cream, lime juice, and chili powder.
  4. Add the charred corn to the bowl and toss to coat.
  5. Fold in cotija cheese and cilantro.
  6. Serve warm or chilled with extra lime and cheese on top.
